In need of some creative cooking ideas

Ok. I have an odd request. For recipes! My girl likes things very bland and has major texture issues. Nothing mushy. (She doesn't eat mashed potatoes, peanut butter, gravy, bacon, anything spicy, or sour) She likes fresh and steamed vegetables, plain chicken or salmon, cheese, pasta, ham, fruit fresh or canned, and most anything sweet.
I'm on a strict "chronic renal failure" diet. No potatoes, whole wheat, bran, beans, nuts, legumes, peanuts, citrus fruits(cranberries, oranges, lemons, limes, etc), tomatoes, pickles, vinegar, yogurt, raisins, breads, or dehydrated foods. I also have to stay with small amounts of dairy, no fluids aside from water, low salt, no potassium, and, preferably no red meat or pork.
In addition, I need to stay low carb and low fat for weight purposes. Lastly, my thyroid is not doing well with lettuce, fresh vegetables, or large amounts of vegetables. Oh, and I don't and will never have a grill.

With all that out there, I could really use some help with ideas for simple recipes. We've been mostly eating chicken or salmon, vegetables that are on the ok list, and rice. Sometimes we have pasta since it's my girl's favorite, I just can only have a tiny amount unless it's rice pasta.
 
I enjoy creative cooking, but wow, that's a lot of restrictions... I'm not sure what to suggest, but I'm a big fan of soups personally. Once you've learned the basics of soup-making, you can throw in just about anything you happen to have in the fridge. Soups are especially good in winter, too!
 
What about a stir fry with rice noodles? Are you able to eat tofu? Or what about paneer (it’s an Indian cheese-not sure how much if any dairy is in it though)? There’s a lot of really great Indian and Asian dishes you guys might like.

Im also a HUGE fan of roasting veggies, I love potatoes (for Eevee), parsnips, red/green/yellow/orange peppers, onion and a bit of basil on top and roast in all together in one pan. It’s delicious. You can also make buffalo “wings” out of cauliflower which is delicious too. I also enjoy a cabbage type stew-thingy. Do you have restrictions on any spices your allowed?

We do quite a bit of Asian and Thai style. Rice, rice noodles, stir fry veggies, and chicken works. Parsnips, rutabegas, too much onion, and many spices are out. I'd definitely try the cauliflower. That sounds good. I do roast quite a lot of veggies during the cold months. Beets, spinach, and corn I need to go easy on. Yellow squash, zucchini, bell peppers, cucumber, green beans, peapods, and butter lettuce are good and I'll be growing them in our garden soon.

So, basically you can’t have root veggies but you can have leafy greens or things that grow above ground with lower/no acidity? What about cloud bread? It’s super easy to make and Cloud Bread, I’ve even made it thin to use as a fajita wrap.

Not sure how you feel about plantains, but they’re good sliced, and baked with a bit of olive oil drizzled and some sea salt on them. I know you said no yogurt but dipping in a bit of dark chocolate is to die for. I’ve also had it in cottage cheese.

I don't know what cloud bread is. I do ok with tortillas and other very thin wraps. Bread made with rice flour would probably be ok... plantains still have too much potassium. I can do chocolate in small amounts thank goodness.

I've never had eggplant, but the rest are awesome.

Can you do non-traditional flour? Things made with almond or coconut flour, for example? (If you said no nuts, I apologize for missing it)

My husband and I do a lot of keto style recipes, so I may have something that will work for you. Will need to compare ingredients against your list of no-nos. I will be back!

I can use regular flour, as long as it's not large amounts. Like my cookies, the amount of flour in one cookie is small enough not to bother me. A large bowl of pasta that's not rice based is painful though. It's whole grains that are a hard no. Coconut I need to be careful with too much as well, but it's not a hard no like nuts or olives.
I'd love to see anything you have, really. I've gotten better at tweaking recipes just enough for my girl to eat them.
 
Hi! That is a lot of restrictions indeed, I can see how you would want some suggestions indeed. I had to think of soups right away, since you make so many varieties of that. But I see that was already an answer ;) And maybe a stupid idea, but ask advice from a nutritional professional? Maybe he or she can give you some nice pointers. Good luck <3

I've had some insurance issues, but I finally got my endocrinologist appointment scheduled. We need to stabilize my thyroid before we can address my underlying renal failure cause. The endocrinologist will be getting me set up with a nutritionist as well. Especially since there's a small chance that I have diabetes.

That is a lot you have to endure, I am really sorry. I really hope things will improve for you! I am sure the colourful pony’s will give some comfort, they always did with me ❤️
